Protein Superfood Cookies!
Here is a yummy recipe for no bake superfood protein cookies!! These are so delicious you are going to LOVE them. I like variety so I used the chocolate topping for some, added coconut to others and even left a few plain :)
1 cup rolled oats
1 scoop of chocolate superfood powder
1 cup natural peanut butter
1/2 cup maple syrup (or honey)
1/4 cup of shredded coconut (unsweetened)
1/4 cup of raisens
1/2 tsp salt
1 T cocoa powder
2 tbs peanut butter
In a medium bowl, mix together everything except the chocolate topping. You can heat up the peanut butter to make it easier to stir. Transfer to a muffin tin lined with liners evenly. Flatten out as best as possible. Freeze the tray for at least 2 hours.
In a small bowl, stir the cocoa powder, salt and peanut butter, heat in microwave for 20 seconds or until melted. Remove the tray from the freezer and drop about 1 -2 tbs of chocolate on the tops and smooth it out flat. Sprinkle with the flaky salt and freeze for another hour.
Store in an airtight container in the freezer.
